CommonGround volunteer Anita Keys shares her recipe for Beefy/Veggie Burritos with Pure Nebraska viewers.


  • 16 oz. ground beef or sausage
  • 2 cups veggies, diced (red pepper, green pepper, onion, summer squash or zucchini)
  • 8 large eggs, whisked
  • 1 cup cheddar cheese, shredded
  • 8 burrito sized flour tortillas


  • Heat a large, non-stock pan over medium heat. Fry meat and veggies until hamburger is no longer pink and veggies are tender. 
  • Drain any grease. Remove from pan and set side.
  • In the same pan, scramble eggs. Season with salt and pepper.
  • Fold eggs into meat and veggie mixture.
  • Scoop about 3/4 c. mixture onto a tortilla.
  • Top with 2 T.  cheese and roll. Repeat with remaining ingredients.
  • Bake immediately at 425 for 10 minutes or freeze and heat in microwave as needed.
