Heat a large, non-stock pan over medium heat. Fry meat and veggies until hamburger is no longer pink and veggies are tender.
Drain any grease. Remove from pan and set side.
In the same pan, scramble eggs. Season with salt and pepper.
Fold eggs into meat and veggie mixture.
Scoop about 3/4 c. mixture onto a tortilla.
Top with 2 T. cheese and roll. Repeat with remaining ingredients.
Bake immediately at 425 for 10 minutes or freeze and heat in microwave as needed.
