CommonGround volunteer Paula Peterson shares her recipe for Cinnamon Sugar French Toast Muffins.
Ingredients
- 6 Slices Bread (cubed) (I like Brioche)
- 3 Eggs
- 1 Cup Milk
- 1/4 Cup Sugar
- 1 Teaspoon Vanilla
- 1/4 Teaspoon Cinnamon
- 1/4 Teaspoon Nutmeg
- 1/4 Cup Melted Butter
Topping
- 1/4 Cup Melted Butter
- 1/4 Cup Sugar
- 1 Tablespoon Cinnamon
Instructions
- Preheat the oven to 350 degrees. Line a muffin tin with paper liners or grease very well.
- In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon and nutmeg until well combined.
- Add cubed bread to the egg mixture and toss until all the bread is evenly coated.
- Drizzle melted butter over the bread mixture and toss again to combine.
- Spoon the bread mixture into the muffin tin, filling each cup to the top.
- Bake in the oven for 20 to 25 minutes or until golden brown and set.
- Remove the muffins from the oven and cool slightly.
- Brush with melted butter and sprinkle cinnamon sugar mixture over the top.
- Best served warm!
- Leftovers can be stored in an airtight container and reheated in a microwave before serving.
