CommonGround volunteer Paula Peterson shares her recipe for Cinnamon Sugar French Toast Muffins.

Ingredients
  

  • 6 Slices Bread (cubed) (I like Brioche)
  • 3 Eggs
  • 1 Cup Milk
  • 1/4 Cup Sugar
  • 1 Teaspoon Vanilla
  • 1/4 Teaspoon Cinnamon
  • 1/4 Teaspoon Nutmeg
  • 1/4 Cup Melted Butter

Topping

  • 1/4 Cup Melted Butter
  • 1/4 Cup Sugar
  • 1 Tablespoon Cinnamon

Instructions
 

  • Preheat the oven to 350 degrees. Line a muffin tin with paper liners or grease very well.
  • In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon and nutmeg until well combined.
  • Add cubed bread to the egg mixture and toss until all the bread is evenly coated.
  • Drizzle melted butter over the bread mixture and toss again to combine.
  • Spoon the bread mixture into the muffin tin, filling each cup to the top.
  • Bake in the oven for 20 to 25 minutes or until golden brown and set.
  • Remove the muffins from the oven and cool slightly.
  • Brush with melted butter and sprinkle cinnamon sugar mixture over the top.
  • Best served warm! 
  • Leftovers can be stored in an airtight container and reheated in a microwave before serving.
