CommonGroundNebraska volunteer Karol Swan shares her Pudding Cookie Recipe with Pure Nebraska viewers.
Ingredients
- 1 cup Butter softened
- 1 cup Brown sugar
- 1 package Butterscotch Pudding mix (use mix dry)
- 2 Eggs
- 2 teaspoon Vanilla
- 1/2 bag Butterscotch BakingChips
- 2 1/4 cup Flour
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- 1 teaspoon Cinnamon (optional)
Instructions
- Stir butter, sugar, pudding mix, eggs and vanilla together.
- Add chips and stir well.
- Stir baking powder, baking soda and cinnamon into the flour, add to the butter mixture and stir well.
- It is best to chill dough well before baking or roll it into 1-inch balls and freeze.
- Bake 350 degrees for 11-12 minutes.
Notes
- You can use any combination of pudding flavors/ chip flavors, or white sugar if you choose vanilla pudding and white chips.
