CommonGroundNebraska volunteer Karol Swan shares her Pudding Cookie Recipe with Pure Nebraska viewers.
- 1 cup Butter softened
- 1 cup Brown sugar
- 1 package Butterscotch Pudding mix (use mix dry)
- 2 Eggs
- 2 teaspoon Vanilla
- 1/2 bag Butterscotch BakingChips
- 2 1/4 cup Flour
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- 1 teaspoon Cinnamon (optional)
Stir butter, sugar, pudding mix, eggs and vanilla together.
Add chips and stir well.
Stir baking powder, baking soda and cinnamon into the flour, add to the butter mixture and stir well.
It is best to chill dough well before baking or roll it into 1-inch balls and freeze.
Bake 350 degrees for 11-12 minutes.
