Soft Pumpkin Chocolate Chip Bars


  • 2 1/2 cups flour
  • 1 1/2 tablespoon baking soda
  • 1 1/2 teaspoon salt
  • 2 sticks unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 1 can 15 oz. pumpkin puree
  • 1 1/2 tablespoons vanilla extract
  • 1 cup chocolate chips
  • 1 tablespoon pumpkin pie spice


  • Preheat the oven to 350°F.
  • Grease a 9×13-inch baking pan
  • In a large bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt.
  • In a separate bowl, beat butter and sugar until fluffy.
  • Mix in the egg, pumpkin puree, and vanilla.
  • Slowly add in the flour mixture and mix until combined.
  • Fold in the chocolate chips.
  • Spread in greased pan.
  • Bake 30-35 minutes, or until a toothpick inserted in the center comes out clean.
