CommonGround Nebraska volunteer Karol Swan shares her recipe for Rhubarb Streusel Muffins.

Ingredients
  

  • 1-1 1/4 Cups Finely Diced Fresh Rhubarb
  • 2 Tablespoons Brown Sugar

Mix the above together and set aside.

  • 1/4 Cup Softened Butter
  • 1/2 Cup White Sugar
  • 1/2 Cup Sour Cream
  • 1 Egg
  • 1 1/2 Cup Flour
  • 1 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Cinnamon
  • 1/4 Teaspoon Salt

Streusel Topping

  • 2 Tablespoon Butter Softened
  • 1/2 Cup Flour
  • 1/4 Cup Brown Sugar
  • 1/4 Teaspoon Cinnamon

Instructions
 

  • Preheat the oven to 350 degrees.
  • Spray grease or put paper in regular size muffin tin.
  • Place batter in pan. 
  • Sprinkle streusel topping on each.
  • Bake for 20-22 minutes.
  • Enjoy!
