CommonGround Nebraska volunteer Karol Swan shares her recipe for Rhubarb Streusel Muffins.
Ingredients
- 1-1 1/4 Cups Finely Diced Fresh Rhubarb
- 2 Tablespoons Brown Sugar
Mix the above together and set aside.
- 1/4 Cup Softened Butter
- 1/2 Cup White Sugar
- 1/2 Cup Sour Cream
- 1 Egg
- 1 1/2 Cup Flour
- 1 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Cinnamon
- 1/4 Teaspoon Salt
Streusel Topping
- 2 Tablespoon Butter Softened
- 1/2 Cup Flour
- 1/4 Cup Brown Sugar
- 1/4 Teaspoon Cinnamon
Instructions
- Preheat the oven to 350 degrees.
- Spray grease or put paper in regular size muffin tin.
- Place batter in pan.
- Sprinkle streusel topping on each.
- Bake for 20-22 minutes.
