Karah Perdue shares a family favorite breakfast dish. It incorporates two of our favorite proteins–pork and eggs.  You can customize it to fit your family.

Egg and Ham Breakfast Bake

Ingredients

  • 24 ounces frozen hash browns
  • 16 ounces cubed ham
  • 8 ounces sharp cheddar cheese (shredded)
  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Cooking spray

Instructions

  1. Preheat the oven to 350 F.
  2. Add the frozen hash browns and ham and cheese to a large bowl. Toss to combine. Pour mixture into a 9x13 inch dish that you have sprayed with the cooking spray.
  3. In a large bowl (can use that same bowl) whisk together eggs with milk and salt and pepper
  4. Pour the egg mixture over the hash browns mixture. Pat everything down with a spoon.
  5. Bake for one hour and twenty minutes uncovered.

Optional: Add minced parsley to the top of the casserole. *You can assemble this the night before. Assemble according to the directions. But don't bake and cover with plastic wrap and refrigerate overnight. Remove plastic wrap and bake.
