Ingredients
  

  • 1 1/2 Cups All-purpose Flour
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Ground Nutmeg
  • 6 Tablespoons Cold Butter
  • 1 Large Egg
  • 1 Cup Honeycrisp Apples (chopped)
  • 1/2 Cup Light Brown Sugar (packed)
  • 1 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Salt
  • 1/2 Cup Milk
  • 1 Teaspoon Vanilla

Glaze

  • 1 Cup Confectioners Sugar
  • 2 Tablespoons Milk
  • 1 Teaspoon Vanilla

Instructions
 

  • Preheat the oven to 400 degrees. Line mini muffin pans with wrappers or grease very well.
  • Whisk together all-purpose flour, brown sugar, baking powder, cinnamon, nutmeg and salt in a large bowl.
  • Cut in butter with pastry blender or grater until mixture resembles coarse crumbles.
  • Whisk milk, egg and vanilla together in a cup.
  • Stir into flour mixture until combined: stir in chopped apple. Using a tablespoon or small scoop fill the muffin tins.
  • Bake in preheated oven until a toothpick inserted near the center of fritters comes out clean, about 6 to 8 minutes. Remove to a cooling rack.
  • Whisk together powdered sugar, milk and vanilla. Brush a thin layer of glaze over the muffins.
  • You can use regular muffin tins, large muffins or even do a loaf pan. Baking times change regular about 10 to 12 minutes, large 15 to 20 minutes and a loaf pan 45 to 50 minutes.
