CommonGroundNebraska volunteer Molly Aden shares her recipe for a Crustless Cranberry Pie with Pure Nebraska viewers.
- 1 Cup Flour
- 1 Cup Sugar
- 1/4 Teaspoon Salt
- 2 Cups Fresh Cranberries
- 1/2 Cup Pecans (chopped)
- 1/2 Cup Butter (melted)
- 2 Eggs
- 1/2 Teaspoon Almond Extract
- 1/2 Teaspoon Vanilla Extract
Preheat oven to 350 degrees & grease a 9-inch pie pan.
Combine flour, sugar, and salt in a bowl.
Add cranberries and nuts, and toss to coat.
Stir in butter, eggs, and extracts. Spread in prepared pan.
Bake for 35-40 minutes or until the toothpick comes out clean.
We enjoy eating it warm with ice cream.
