CommonGround Nebraska volunteer Karol Swan shares her recipe for Rhubarb Streusel Muffins.
• 1-1 1/4 Cups Finely Diced Fresh Rhubarb –
• 2 Tablespoons Brown Sugar –
• 1/4 Cup Softened Butter –
• 1/2 Cup White Sugar –
• 1/2 Cup Sour Cream –
• 1 Egg –
• 1 1/2 Cup Flour –
• 1 1/2 Teaspoon Baking Powder –
• 1/2 Teaspoon Cinnamon –
• 1/4 Teaspoon Salt –
• 2 Tablespoon Butter Softened –
• 1/2 Cup Flour –
• 1/4 Cup Brown Sugar –
• 1/4 Teaspoon Cinnamon –
• Preheat the oven to 350 degrees.
• Spray grease or put paper in regular size muffin tin.
• Place batter in pan.
• Sprinkle streusel topping on each.
• Bake for 20-22 minutes.
• Enjoy!
