Keys Freezer Corn


  • 2 qt. corn cut from the cob (4 dozen ears of corn gave me ~6 qt. This really depends on the length of the cob, fullness of the ear, variety of sweet corn, etc.)
  • 1 pt. or 2 c. water
  • ½ c. sugar
  • 2 t. salt


  • Combine all ingredients in large pot. For example: 6 or 8 qt.
  • Boil 10 minutes, stirring occasionally.
  • Cool in container with high sides in ice water bath.
  • Make ~ 3-4 pt.
