CommonGroundNebraska volunteer Molly Aden shares her recipe for a Crustless Cranberry Pie with Pure Nebraska viewers.
• 1 Cup Flour –
• 1 Cup Sugar –
• 1/4 Teaspoon Salt –
• 2 Cups Fresh Cranberries –
• 1/2 Cup Pecans (chopped) –
• 1/2 Cup Butter (melted) –
• 2 Eggs –
• 1/2 Teaspoon Almond Extract –
• 1/2 Teaspoon Vanilla Extract –
• Preheat oven to 350 degrees & grease a 9-inch pie pan.
• Combine flour, sugar, and salt in a bowl.
• Add cranberries and nuts, and toss to coat.
• Stir in butter, eggs, and extracts. Spread in prepared pan.
• Bake for 35-40 minutes or until the toothpick comes out clean.
• We enjoy eating it warm with ice cream.
