CommonGroundNebraska volunteer Karol Swan shares her Pudding Cookie Recipe with Pure Nebraska viewers.
• 1 cup Butter softened –
• 1 cup Brown sugar –
• 1 package Butterscotch Pudding mix (use mix dry) –
• 2 Eggs –
• 2 teaspoon Vanilla –
• 1/2 bag Butterscotch BakingChips –
• 2 1/4 cup Flour –
• 1 teaspoon Baking powder –
• 1 teaspoon Baking soda –
• 1 teaspoon Cinnamon (optional) –
• Stir butter, sugar, pudding mix, eggs and vanilla together.
• Add chips and stir well.
• Stir baking powder, baking soda and cinnamon into the flour, add to the butter mixture and stir well.
• It is best to chill dough well before baking or roll it into 1-inch balls and freeze.
• Bake 350 degrees for 11-12 minutes.
• You can use any combination of pudding flavors/ chip flavors, or white sugar if you choose vanilla pudding and white chips.
