Oatmeal Muffins and Honey Butter

- Oatmeal Muffins
- 1 egg
- 1 cup buttermilk (powered type will work)
- 1/2 cup brown sugar
- 1/3 cup shortening or cooking oil ( I use oil)
- 1 cup quick oats oatmeal ( just out of box) let set 15 minutes or so
- In another bowl
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 to 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon (optional)
- Honey Butter
- 1 cup sugar
- 1 cup Whipping Cream
- 1 cup Honey
- Oatmeal Muffins
- Stir flour mixture into oatmeal mixture
- Mix gently don't over mix
- Grease or paper a muffin tin
- Fill about 2/3 full will make 12 muffins
- Bake 400 degrees 15-20 minutes.
- Test top for doneness as you don't want to over bake
- Honey Butter
- Bring to a rolling boil for 3 minutes stirring constantly.
- Put 4 sticks butter( 1 pound) in a large heat safe bowl carefully pour hot mixture over butter.
- Beat with a mixer several minutes to blend completely pour mixture into several small plastic or glass containers.
- Let cool until firm Makes about 5 cups.
- The Honey Butter lasts a long time and a small container makes a fun gift.
