It’s that time of year again! Autumn is quickly approaching, and it’s time to break out the jeans and jackets, service the combine, and attach the grain cart – it’s harvest time!

I can already feel the days getting shorter, which isn’t necessarily a good thing when there’s plenty of work to be done. There’s no set 9-5 schedule for farmers, especially during this time of year. Days and well, nights, can get long during harvest season, so I like to surprise the guys by taking them a treat in the field every now and then.

I got the recipe for this dangerous dessert from my sister-in-law after she brought them over to our family Thanksgiving several years ago. After one bite, they quickly got added to my go-to recipe box. They have always been a huge hit!

Harvest Pumpkin Bars



Pumpkin Bars

  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • 2 cups sugar
  • 4 eggs, slightly beaten
  • 2 cups pumpkin, canned
  • 1 cup vegetable oil


  1. Sift first 6 ingredients into mixing bowl
  2. Add eggs, pumpkin, and oil
  3. Mix until blended and creamy
  4. Bake in ungreased 10×15 jelly roll pan at 350 for 25-30 min.

Cream Cheese Frosting


  • 3 oz cream cheese
  • 6 T butter
  • 3 cups powdered sugar
  • 1 tsp milk
  • 1 tsp vanilla


  1. Mix all 5 ingredients for frosting until creamy
  2. Spread over cooled bars
