Oatmeal Muffins and Honey Butter

Ingredients
  1. Oatmeal Muffins
  2. 1 egg
  3. 1 cup buttermilk (powered type will work)
  4. 1/2 cup brown sugar
  5. 1/3 cup shortening or cooking oil ( I use oil)
  6. 1 cup quick oats oatmeal ( just out of box) let set 15 minutes or so
  7. In another bowl
  8. 1 cup flour
  9. 1 teaspoon baking powder
  10. 1/2 to 1 teaspoon salt
  11. 1/2 teaspoon baking soda
  12. 1 teaspoon cinnamon (optional)
  13. Honey Butter
  14. 1 cup sugar
  15. 1 cup Whipping Cream
  16. 1 cup Honey
Instructions
  1. Oatmeal Muffins
  2. Stir flour mixture into oatmeal mixture
  3. Mix gently don't over mix
  4. Grease or paper a muffin tin
  5. Fill about 2/3 full will make 12 muffins
  6. Bake 400 degrees 15-20 minutes.
  7. Test top for doneness as you don't want to over bake
  8. Honey Butter
  9. Bring to a rolling boil for 3 minutes stirring constantly.
  10. Put 4 sticks butter( 1 pound) in a large heat safe bowl carefully pour hot mixture over butter.
  11. Beat with a mixer several minutes to blend completely pour mixture into several small plastic or glass containers.
  12. Let cool until firm Makes about 5 cups.
Notes
  1. The Honey Butter lasts a long time and a small container makes a fun gift.
