Corn and Black Bean Salad

Ingredients
  1. Salad Ingredients
  2. 1 - can whole kernel corn, drained or 4 ears of fresh
  3. sweet corn
  4. 1 - can black beans, rinsed and drained
  5. 2 - large tomatoes, finely chopped
  6. ½ - large red onion, finely chopped
  7. 2 - garlic cloves, minced
  8. Optional - 2 cucumbers chopped, 1 red pepper chopped
  9. Dressing
  10. 2 tbl sugar
  11. 2 tbl white vinegar
  12. 1 ½ tsp lime juice
  13. ¼ tsp salt
  14. ¼ tsp ground cumin
Instructions
  1. In a large bowl, combine the salad ingredients.
  2. In a small bowl, whisk the dressing ingredients; pour over corn mixture and toss to coat.
  3. Cover and refrigerate for at least 1 hour.
  4. Stir before serving.
  5. Serve with a slotted spoon.
